To evaluate the quality of a protein, the Food and Agricultural Organization
(FAO) and the World Health Organization (WHO) have adopted the PDCAAS method
(Protein Digestibility-Corrected Amino Acid Score). This method is based
on comparing the concentration of amino acids in the food product under
study with the pre- school children’s requirement of amino acids.
Those proteins formed by an equal or greater quantity of amino acids than those
required receive a PDCAAS of 1.
In the following chart we can see that the proteins of casein, whey and soy
equalize or exceed the recommendations of FAO /OMS for children from 2 to 5
years old:
